However, if you&#8217;d just like to have a go at making tried-and-tested Soul Cakes, here&#8217;s a modern recipe supplied by a friend to the project, <a href=\"https:\/\/community.dur.ac.uk\/reed.ne\/?tag=ros-barnes\">Ros Barnes<\/a>. You may even have tried Ros&#8217;s samples if you&#8217;ve attended on of our <a href=\"https:\/\/reed-ne.webspace.durham.ac.uk\/?page_id=3961\">Souls of the North<\/a> shows.<\/p>\n<h2 class=\"gmc-recipe-subtitle\">Ingredients<\/h2>\n<ul class=\"gmc-ingredient-list\">\n<li style=\"list-style-type: none;\">\n<ul class=\"gmc-ingredient-list\">\n<li class=\"gmc-ingredient-list-item\">175g\/6oz butter<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<ul class=\"gmc-ingredient-list\">\n<li style=\"list-style-type: none;\">\n<ul class=\"gmc-ingredient-list\">\n<li class=\"gmc-ingredient-list-item\">175g\/6oz caster sugar (6ozs)<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<ul class=\"gmc-ingredient-list\">\n<li style=\"list-style-type: none;\">\n<ul class=\"gmc-ingredient-list\">\n<li class=\"gmc-ingredient-list-item\">3 egg yolks<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<ul class=\"gmc-ingredient-list\">\n<li style=\"list-style-type: none;\">\n<ul class=\"gmc-ingredient-list\">\n<li class=\"gmc-ingredient-list-item\">450g\/1lb plain flour<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<ul class=\"gmc-ingredient-list\">\n<li style=\"list-style-type: none;\">\n<ul class=\"gmc-ingredient-list\">\n<li class=\"gmc-ingredient-list-item\">2 teaspoons mixed spice<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<ul class=\"gmc-ingredient-list\">\n<li style=\"list-style-type: none;\">\n<ul class=\"gmc-ingredient-list\">\n<li class=\"gmc-ingredient-list-item\">100g\/4oz currrants, or fruit of your choice<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<ul class=\"gmc-ingredient-list\">\n<li class=\"gmc-ingredient-list-item\">Tablespoon of milk<\/li>\n<\/ul>\n<\/div>\n<div class=\"gmc-recipe-steps\">\n<h2 class=\"gmc-recipe-subtitle\">Directions<\/h2>\n<ol>\n<li>Preheat\u00a0oven to 180C\/375F\/Gas mark 5.\u00a0Cream the butter and sugar together and then beat in the egg yolks, one at a time.<\/li>\n<li>Sift the flour into another bowl with the mixed spice. Add to the butter, sugar, and egg yolk mixture.<\/li>\n<li>Stir in the currants or other fruit and add enough milk to make a soft dough, similar to scones.<\/li>\n<li>Roll the dough out and cut out little cakes with a biscuit cutter. Mark each cake with a cross and then place them on a greased and\/or lined baking sheet.<\/li>\n<li>Bake for 10 to 15 minutes, or until golden brown.<\/li>\n<li>Cool on a wire rack.
